The Gambaro’s fresh water fillet freshness really absorbed the flavours.

A lovely tropical way to liven up some fish and rice.
Comments
The recipe required tinned black or pinto beans, which we could only find dried in the health shop or the specialist deli in the Valley. Since they would have required soaking overnight and we didn’t really want a 1kg bag of them, we substituted with borlotti beans. (At least they looked the same, not sure about the taste!)
