We used barramundi for this dish, it did not suit the dish because it is a river fish and not an ocean swimmer. The flat bread was great and had a slight coconut flavour to it.

* Little m – 6
The sauce was nice to begin with and reminded me a little of mango chutney, but by the end of the dish it was a bit too rich. I probably wouldn’t have this one again. The flat bread was really nice.

Both recipes were from A Taste of Africa, although Trinidad and Tobago is part of the Caribbean! We also used this book for the recipes for the Ghana night, and the author Dorinda Hafner is from Ghana so they should be authentic. It is easier to find international recipes on the Internet, but a little more difficult to know how genuine they are.

We couldn’t find lemon thyme, so we used thyme and lemon.

We have discovered that it is easier to get up at 5am then 11pm to watch the football. Big M has worked out a system where he tapes the first game, then gets up to watch the second game and in between the break watches the first game off the tape. Then he watches the third game live. Of course, this really only works on the weekend we you can spend the rest of the day catching up on lost sleep!
